Provider Seafood is a one-man operation: Charlie runs his lines on the Chesapeake before most folks are awake, culls and grades every crab by hand, and steams them the same day with plenty of Old Bay.
No middleman, no cold storage, no mystery. When the board says jumbos, they were swimming this morning. When it says sold out — that's the Bay for you. Come back tomorrow.
